Yes. we make everthing by hand. Shape, size and thickness inconsistencies are the natural results of our hand processes. But rest assured: we control all batches for taste and texture based on our long experience.
Exactly that. Our biscuits are made in (at least) two distinct short baking sessions. We bake the biscuits once, then separate them carefully and rearrange them as necessary for even heat exposure, then bake them again for a few more minutes. The French have a name for this: 'bis' (twice) - 'cuit' (cooked).

We bake our products in our home, with utmost care and abiding by the strict regulations - on which we are formally trained - of the Colorado Cottage Foods Act for the production, storage and distribution of foods in Colorado. No. However, they are best enjoyed fresh (within two weeks of production). We recommend you store them sealed in a cool dry place and discard them if the packaging is damaged or the product shows signs of spoilage.
